When an Environmental Health Officer comes to call on your food business are you ready? Whether it is a routine inspection; relating to a customer complaint of food poisoning; or worse a product recall it is important that you respect the visiting enforcement officer from the outset.

During the inspection, the enforcement officer will work in accordance with the Food Law Code of Practice and Food Law Practice Guidance with their sole aim to ensure you are meeting food hygiene and safety requirements and that the food you are producing and selling is safe for customers to eat.

 

They will want to talk to the business owner and your team about your activities and how you manage food safety and will also want to review your food safety documentation and assess the structure of your premises.  They may take photographs, samples or swabs for evidence purposes

KEY THINGS TO BE AWARE OF

​

  1. The EHO is authorised by the local authority to enter your business premises – don’t refuse them entry as this is considered obstruction and is an offence under the law

  2. The EHO will want to check the business ownership and management details, contact details and opening times

  3. The EHO will ask you and your staff about the food safety practices and procedures – make sure everyone is familiar with the control measures and can explain them and where applicable demonstrate them through records

  4. The EHO will look at every part of your premises and equipment

  5. They’ll ask you about staff training, controlling hazards and temperature control

  6. They will want to see your safety management system, SFBB Daily Diary, risk assessments and training certificates

  7. They may also ask to see your maintenance records e.g. gas safety certificates, portable appliance testing (PAT) checks, accident records and evidence of your pest control checks

  8. They might also take photographs, samples of food and swabs to check the cleanliness of food contact surfaces and equipment.
